Black Beans with "Chicharron"

INGREDIENTS
  • 1 lb. (½ kg) black beans
  • 3 pints (1½ liter) water
  • 1 medium onion ½ head garlic
  • ½ lb. (¼ kg) thin fried pork rind
  • 1 or 2 ground pasilla chiles
  • Epazote herb
  • Salt to taste.

PREPARATION

Soak beans in water overnight to soften. Drain and with new fresh water cook, adding onion, garlic and salt. When they are soft, add the chicharron, chile and epazote. Boil until the chicharron becomes soft.
