The blend between the ingredients and traditions from different regions of prehispanic México with the Spanish and French influence gave birth to some of the most original and delicious dishes anywhere in the world, and noother cities in México reflects this quite like Puebla and Oaxaca.

 

Puebla is the cradle of world famous Mole Poblano, celebrated Chiles en Nogada and such staples of everyday Mexican food such as the Chalupas and Cemitas, among many other distinctive recipes.

 

Oaxaca is just as relevant, having given birth to its own distinctive mole: The Mole Oaxaqueño, along with unique exotic prehispanic delicacies such as Grasshopers and Escamoles.
